Yesterday marked five years since Rhombus Guys opened in downtown Grand Forks and changed the local pizza scene for good. I’ve said previously that it’s the best, freshest pizza in town and a great place to go for a beer.
So here’s to you Guys for a great and successful five years!
In other Rhombus news, the Fargo location will likely soon have rooftop dining like Grand Forks currently does. I think it’s a great idea and something nobody else has, at least in Grand Forks. The only drawback are the wasps that swarm the place in the summer. If you’re allergic, stay downstairs.
Owners Matt Winjum and Arron Hendricks started a smoothie stand in the Mentor, MN, area that turned out not to be exactly square. Thus the name Rhombus. After that, they started the Rhombus House of Pizza, learning the ways of the pie.
Winjum and Hendricks opened Cafe Rhombus in Thief River Falls in the fall of 2004 serving burgers, pizza, sandwiches and more.
In 2006, they found the former Sander’s building on Kittson Ave. and thought it was perfect. Cafe Rhombus closed but Rhombus House of Pizza in Mentor is still going strong. So where will the pair set up shop next? How about Bismarck? The word of Rhombus must be spread.
If you haven’t had the chance to check out the menu, a few of my favorite pizzas are Girlfriend Diavolo (spicy marinara, chicken, jalapeño, pineapple, cheddar and mozzarella), the Tuscany (mustard Tuscan sauce, garlic, chicken, onion, red pepper, tomato, mozzarella, ricotta and oregano) and the Backpacker (marinara, spinach, roasted garlic, tomato, artichoke, kalamata olives, mushrooms, bell peppers, feta cheese and mozzarella).
But I’ve got to try the Pulled Pork (jerk sauce, red peppers, tomato, onion, pepperoncinis, cheddar and pulled pork), and the Taco pizza (marinara, beef, black olives, onions, tortilla chips, tomato, lettuce, cheddar cheese and salsa and sour cream on the side.)
